Brewer's insight
Cacao-forward, bitter-leaning at first — then orange zest through. The molasses comes on the finish, quiet and long. A slightly longer ratio opens the cup without thinning it.

The Varietal
Two lots. One cup. Neither visible on its own.
Both components of Blend 369 come from the same estate, the same varietal, the same altitude. SLN9 and Catimor — selected for Indian growing conditions, built for structure and density across extended fermentation. What changes between the two lots is time and method. What those differences produce, blended, is a cup neither lot could make alone.
At 4600ft in the Shevaroy Hills, both lots ripen slowly under the same canopy. The varietal is consistent across both. The process is what diverges — and the blend is what makes that divergence legible.

The Process
Two lots. One blend.
The primary component — is a 72-hour anaerobic washed lot from PKC Kudiraipanjan. Handpicked at Brix 24, de-pulped, sealed below 21°C, pH monitored. 24-hour post-fermentation soak. Dried under 75% shade over 21 days. Rested 60 days.
The remaining is a second lot from the same estate, a different process — one we're keeping close. What it contributes isn't obvious. That's the point.
The dark chocolate, the orange zest, the molasses on the finish — none of it belongs to either lot alone. It belongs to the ratio. To the decision to hold them together.

The Estate
PKC Kudiraipanjan Estate · Yercaud, Shevaroy Hills · 4000–4600ft ASL · Est. 1878
PKC Kudiraipanjan has been farmed continuously since 1878, now in its third generation under the Kandasamy family. The estate sits at 4000–4600ft in the Shevaroy Hills of Tamil Nadu, receiving 65–80 inches of annual rainfall. Both lots in this blend come from the same land — separated by process, unified in the cup.
Coffee grows within a maintained agroforest intercropped with pepper, orange, jackfruit, avocado, mango, and banana. A canopy of Silver Oak, Indian Blackberry, and native forest species slows cherry maturation and deepens flavour development. Indian Gaur, Wild Boar, and the Small Indian Civet share the same ground. The biodiversity isn't incidental — it's what both lots grew inside of.
The Philosophy
Earth and Venus meet five times over eight years. Each meeting unremarkable on its own. But track all five — plot each one, step back far enough — and what they've drawn together is a rose.
No plan. No awareness. Just two things moving in their own orbits, and the shape that appears when you finally see the whole.
Most things in life work this way. The connections that mattered, the decisions that shaped you, the people who stayed — none of it looked like a pattern while it was happening. Only later, from a distance, does the rose appear.
Blend 369 is built on that. Two lots, one cup, a profile that doesn't give itself up immediately. The chocolate, the orange, the molasses — they arrive in sequence. You only understand what you're holding once the cup is done.
Some patterns only reveal themselves to those who stay.
