Brewer's insight
The first sip is all fruit. Raspberry comes forward immediately — vivid, almost loud. Then the cup broadens into something deeper and darker, where the red wine character starts to show itself. As it cools, the acidity changes shape. What begins bright and juicy becomes cleaner, more defined. That's where the cape gooseberry appears: tart, slightly wild, lingering long after the sip is gone. Give this coffee time. It's rarely the same cup at the beginning and at the end.
